This Chroma 7-1/4-inch santoku, or Asian-style chef's knife, is an excellent all-purpose knife for precise, thin cuts during slicing and chopping. A santoku features a flat spine that curves down to the sharply tipped blade, which has just enough curve to get a good rocking motion going during cutting. The knife feels exceptionally well-balanced and stays comfortable during long bouts of food preparation. After use, Chroma Type 301 knives should be immediately washed and dried by hand, and placed in a storage block for safekeeping. To sharpen, use only a Chroma original 301 whetstone, never a sharpening steel which can damage the fine blades.
